Although a large variety of plants and herbs are used medicinally in India, only a few herbs are used extensively in Indian cuisine. Herbs are typically added to raitas, curries, or mixed into the dough for Indian breads. Herbs add a fresh and bright flavor to Indian dishes, as well as add visual appeal.
Coconut grows plentifully in India, especially in the south, and is used three main forms; coconut milk, dry grated coconut, and fresh grated coconut.
